Oatmeal Banana Muffins

In recent years I have felt that pull to use simpler, more natural ingredients in my recipes. I have always been a lover of oatmeal with the way that it fills me up in the morning as well as the texture and flavor benefits of adding it to some of my favorite recipes.  Oatmeal adds texture and is a great better-for-you option which is why I love to use it when I bake and cook!

Seeking out Non-GMO products has become very important to me and I was lucky to find that in McCann’s Irish Oatmeal® as they now have a line of certified Non-GMO oatmeal to choose from, with the same delicious flavor and texture as always. McCann’s Irish Oatmeal® is also minimally processed making it a great choice for your breakfast, snacks or in your recipes.

Delicious Oatmeal Banana Muffins that are perfect for breakfast!

Oatmeal Banana Muffins

Ingredients:

1 cup McCann’s Quick Cooking Irish Rolled Oats

2 cups all-purpose flour

½ cup brown sugar, packed

⅓ cup granulated sugar

½ stick butter, melted

2 eggs

3 bananas, ripe

1 ½ cups half and half

1 tsp. Baking soda

2 tsp. Baking powder

2 tsp. Ground cinnamon

½ tsp. Salt

Directions:

Preheat oven to 350℉

Lightly grease or spray muffin tins.

Combine oats, flour, brown sugar, granulated sugar, baking soda, baking powder, cinnamon, and salt well in a large bowl.

In a separate bowl whisk together melted butter, eggs, half and half.

Combine dry ingredients and wet thoroughly.

Pre Mash bananas then stir into batter, if you don’t like chunks of fruit in your muffin you can puree them in a food processor for a smoother texture, we like big pieces that add to the sweetness.

Scoop into prepared muffin tins until ⅔ full.

Bake for 22-25 minutes until tops are golden brown and a toothpick inserted in center comes out clean.

Allow muffins to cool for 5 minutes before removing from tin.

Enjoy! They are especially delicious warm with a pat of butter on top! Add a fresh banana on the side for a great breakfast on the go.

  1. I always add cinnamon and maple syrup to my oatmeal and then I like adding fresh fruits, nuts and seeds. I usually go for bananas and chia seeds

  2. I like your regular steel cut oats. Add a bit of brown sugar and a few raisins and stay full for hours!

  3. My choice is the McCann’s Traditional Steel Cut Irish Oatmeal variation. With that option, each member of our household can customize the oatmeal to individual taste

  4. If we must select a pre-prepared combination made by McCann’s, we will select the McCann’s Artisan Collection apple, cranberry & walnut combination. However, we would usually choose the traditional steel cut irish oatmeal and add what we want to it

  5. I eat oatmeal for breakfast every morning and lately my favorite combination has been apples, candied pecans, raisins, cinnamon, nutmeg and maple syrup. I also make twists on bananas foster, carrot cake, blueberry cobbler and chocolate raspberry tart.

  6. I LOVE MAPLE FLAVORED OATMEAL. I ALSO LOVE OATMEAL COOKIES WITH CHOCOLATE CHIPS AND PECANS.
