Oven Pancakes with Strawberry Sauce
Last weekend we took our camper out for our first trip of the season. We JUST got a camper a couple short weeks ago so we're trying to get all the kinks worked out. Plus, I'm just learning how to cook over a campfire from my brother. These Oven Pancakes with Strawberry Sauce are inspired by our trip.
We made a couple delicious meals over the campfire like pancakes for breakfast. Chocolate chips on a few of them for my nephew.

There's just something about cooking over the fire outside that makes the meals tastes that much better.

And Brownies in the Dutch Oven for dessert! Topped with delicious different candies of course!

After we got home from the trip, I was CRAVING pancakes like nobody's business. Pancakes for breakfast, pancakes for lunch - I was on a pancake kick.
One of the ways I made them was Oven Baked Pancakes with a Strawberry Syrup and whip cream. This was breakfast but I'm telling you it tasted like dessert - Strawberry Shortcake!

How to Make Oven Pancakes with Strawberry Sauce
Ingredients You Need
- 1 Cup Krusteaz Buttermilk Pancake Mix
- ⅔ Cup Water
- 1 Egg
- 1 Tablespoon Butter
- 1 Teaspoon Sugar
- 1 Teaspoon Cinnamon
- 2 Cups Fresh Strawberries, quartered
- ½ Cup Sugar
- 1 Tablespoon Lemon Juice
- Whip Cream

Instructions
Mix together the Krusteaz Pancake Mix, Water and egg in a medium sized bowl until it's just combined - don't over mix
I used my cast iron skillet and warmed it up in the oven be placing the tab of butter in the skillet to melt, make sure to spread it around in the skillet before sprinkling the 1 teaspoon of sugar and cinnamon in the bottom of the skillet
Pour the pancake batter into the skillet and bake for 15 - 20 minutes
While the pancake is baking, place your strawberries, sugar and lemon juice on medium head and cook for about 10 minutes
Use a wooden spoon to smash the strawberries and release the juice
After the pancake is finished, top with strawberries and whip cream. Enjoy this delicious breakfast/dessert!

I used a 9 inch cast iron skillet and this recipe made 8 servings, I cut it like a pie.
