I love breakfast food. Morning, noon or night I could eat breakfast. My favorite go-to breakfast has to be good old fashioned pancakes. While I am huge fan of the classic pancake with maple syrup, I do enjoy mixing things up every once in a while and trying something new.
Vanilla pancakes smothered in lingonberry blueberry sauce – need I say more? The combination of vanilla and blueberry has to one of the best flavor combos! I’ve made vanilla pancakes in the past but used maple syrup and they were good, but this time I wanted to switch things up. I used Felix Jam to make my Lingonberry blueberry sauce. Not only was it super easy it was also delicious!
This is a great recipe if you are hosting breakfast or just want to spoil your family (and yourself)!
Ingredients:
Vanilla Pancakes
- 3 Cups Cake Flour
- 3 Tablespoons Baking Powder
- 2 Tablespoons Sugar
- 1/2 Teaspoon Salt
- 2 Cups Milk
- 2 Large Eggs
- 3 Teaspoons Vanilla
- 4 Tablespoons Melted Butter
Sauce:
- 1/2 cup FELIX Lingonberries with Blueberry Jam
- 2 teaspoons Hot Water
- 1/2 cup Fresh Blueberries
Directions:
- Mix together dry ingredients in a large bowl.
- Mix together milk, eggs, and vanilla in a separate bowl.
- Add wet ingredients to dry ingredients. Stir gently until combined.
- Add melted butter to the batter. Stir gently to combine.
- Cook on a greased skillet over medium-low heat until golden brown.

Add FELIX Jam, hot water and fresh blueberries to a small sauce pan.
- Serve with FELIX lingonberries & blueberry sauce poured over top of your pancakes.
**Stir in more milk if needed for thinning the pancakes.
Felix jams are made with the delicious Lingonberry that has been picked and used in jams since the Viking times. It’s easy to see why it’s the number one jam in Sweden after taking just one taste of this delicious product.
I first had the chance to try the Felix line of products in New York at the Fancy Food Show a couple months ago. I was immediately impressed by the tart-sweet jam that I knew would be amazing in so many of our recipes. After being home and using the product, not only did it go perfectly with these Vanilla Pancakes but we’ve also used it on our easy Slow Cooker Meatballs as well as using it as a glaze on ham. Don’t forget it’s perfect in the morning on a piece of toast too!
There’s a couple different flavors available from Felix like the original Lingonberry flavor or new Lingonberries with Blueberries or Ginger. Plus, there was a flavor released at the Fancy Food Show, Lingonberry with Spiced Apple and Cinnamon. They are all delicious jam options that my family loves.
