Bacon and Pimento Grilled Cheese Sandwiches Gourmet

We had a friend from out of state visit us recently and I was talking about the winter in Minnesota and found myself responding to one of his questions with, “Well, it really only starts to get bad when it gets around -10.” All of us sitting around the table let out big belly laughs at the absurdity of my statement and the fact that it really was true! Lately we’ve had some really chilly weather hit and you know it’s cold when a warm up to 20 degrees sounds like a heat wave!

But it is possible to survive winter when it gets cold and even make it enjoyable by finding fun recipes and activities with your kids in the winter. Comfort food classics like soup and grilled cheese sandwiches are big hits for families on chilly winter nights and are easy to make ahead of time and reheat on busy school nights.

But grilled cheese sandwiches don’t have to be boring! I love making what I call gourmet grilled cheese sandwiches. These are grilled cheese sandwiches that are super flavorful and that both adults and kids love. You can make gourmet grilled cheese sandwiches from leftovers, like my Pot Roast Grilled Cheese Sandwiches or use a fun and popular spread like Pimento Spread to give the sandwich a creamy and smoky bacon flavor.

Bacon and Pimento Grilled Cheese Sandwiches Pimento Spread

For my Bacon and Pimento Grilled Cheese Sandwiches, we are making a really simple Bacon and Pimento Spread. Pimentos are sweet cherry peppers and you can find them in the fresh olive area of your grocery store or jarred and chopped near the pickle and condiment area. The spread were are making is a creamy dip that features these chopped sweet peppers and combines them with flavors of garlic and bacon. When you make the spread, you’ll have some extra after you put it on your sandwiches, so grab some crackers and enjoy it on its own too. These Bacon and Pimento Grilled Cheese Sandwiches are easy to put together, I like to use Texas Toast because it is already buttered and seasoned with garlic. And I like to cook my grilled cheese sandwiches on low so it allows time for the cheese to melt and get the toast nice and browned.

Bacon and Pimento Grilled Cheese Sandwiches Simple

Bacon and Pimento Grilled Cheese Sandwiches

8 ounces Cream Cheese (softened or use whipped cream cheese)

4 ounces Diced Pimentos

3/4 tsp Salt

½ tsp Garlic Powder

1 cup Real Bacon Bits/ Cooked Chopped Bacon Pieces

8 slices Mozzarella Deli-Style Cheese Slices

8 slices Texas Toast

Directions:

In a medium-sized bowl, with a small hand mixer, combine cream cheese, diced pimentos, salt and garlic powder. Once combined, add bacon pieces.

Heat greased skillet over low heat.

Spread the bacon pimento mixture on four slices of Texas Toast (about ¼ cup of spread per slice) and top each piece with two slices of mozzarella cheese. Top with remaining toast. There will be leftover Bacon Pimento spread.

No need to butter the Texas toast, just fry in the pan until cheese melts and toast is browned.

  • 8 ounces Cream Cheese (softened or use whipped cream cheese)

  • 1 cup Real Bacon Bits/ Cooked Chopped Bacon Pieces
