Avocado Chicken Sandwich #HarvestBlends

Raise your hand if you love nothing more than a delicious sandwich that’s loaded with nutritious ingredients between a hearty bread? My hubby and I both work from home and that means we could get crazy and make just about anything for lunch but then our waistline really shows it.

We made a simple sandwich instead but we’re always looking for a new version to make like this amazing Avocado Chicken Sandwich on the new Peppridge Farm Harvest Blend Seeded Grain Bread.  The soft texture makes it the perfect choice to use in our sandwich!

Avocado Chicken Sandwich #HarvestBlends

I’m kind of a bread snob when it comes down to it.  I love a soft, buttery bread that seems to melt in your mouth.  Honestly, I’ve avoided grain breads until now just because I haven’t been able to find the texture that I love.  That’s all changed with this Peppridge Farm bread, it’s soft and fresh-baked taste makes it exactly what I’m looking for!

Avocado Chicken Sandwich 

Ingredients
2 Chicken Breast
Lemon Pepper
1 Avocado
1/4 cup Mayo
1/4 tsp. garlic salt
2 slices Provolone Cheese
Sliced Red Onion
Pepperidge Farm – Harvest Blends – Seeded Grain Bread
Serving size: 2
Instructions
Pound out your Chicken Breast until chicken is equal thickness, sprinkle lemon pepper to the Chicken Breast and fry your Chicken Breast until it’s 165 degrees.
While your chicken is cooking slice one Avocado into smaller pieces. Slice up as much Red Onion as you prefer, 3 slices per sandwich is a good amount if you are a red onion lover.  In a bowl mix Mayo and Garlic Salt.
In another frying pan butter each side of the Pepperidge Farm – Harvest Blends – Seeded Grain Bread and fry until you’ve got a brown crust. Turn over and fry the other side of the bread.
Once your chicken is cooked add a slice of Provolone Cheese and cover your frying pan with a lid to melt the cheese.
Compile your Avocado Chicken Sandwich by spreading the mayo/garlic mix onto your bread, add red onion and avocado, place your provolone chicken on top. Then spread the mayo/ garlic onto the other piece of bread adding avocado (use a  half avocado per sandwich)  and use this piece of bread to top off your sandwich. Slice your sandwich in half and enjoy!

 We also found that the Pepperidge Farm Harvest Blends Sprouted Grain Bread was perfect to use in French Toast Kabob’s with fresh fruit! My kids loved them!!

Ingredients
Pepperidge Farm – Harvest Blends – Sprouted Grain Bread
1 Egg
1/4 tsp Vanilla
1 tsp. Sugar
1/2 tsp Cinnamon
1 tsp Brown Sugar
1/4 tsp Salt
1 tbs Milk
1/2 tbs Butter
1/2-1 cup of your desired Fruit
Powered Sugar (optional)
Fruit Dip (optional)
Serving size: 2
Instructions
In a deep dish crack and whisk one egg. Add all the ingredients except the butter, fruit, powered sugar, fruit dip and whisk.
In a frying pan on medium heat, add the butter.
Dip both sides of your Pepperidge Farm – Harvest Blends – Sprouted Grain Bread in your liquid mixture and place in your frying pan to fry until your bread is crisp brown.
Once your bread is done place it on a cutting board and cut into squares.
On a skewer push your desired fruit onto the skewer alternating the cinnamon french toast with the fruit. Sprinkle with powdered sugar and pair with a fruit dip. Drizzle maple syrup for even more flavor.
