Avocado Spinach Quinoa Salad is my new go-to lunch option! We’re changing things up a little bit over at The Taylor House, we’ve been eating clean and healthy for the last three weeks. The difference it’s made in my energy and how I feel is AMAZING! Plus, I’ve lost 10 pounds!
How crazy is that? I wanted to share this simple salad with you, I know you’ll love it just as much as we have!
Sometimes you just need a change! Whether it’s your wardrobe, decorating your house or even your daily meal planning. I came to the realization that our 20th anniversary trip to Hawaii was only a couple months away and if I wanted to fit comfortably in a swimsuit, something needed to change!
I had heard and read so much about clean eating, the benefits of not just losing weight but your overall health seemed like it was worth a shot. I am so incredibly glad I did! Let’s be honest, I do miss bread and cheese but I think we’ll add it back in slowly next week and see how it goes. 🙂
Something else I’ve changed is how much I get up and move about each day. I used to sit and work for 8 hours straight, not moving unless it was to get food or create a project. I’ve been making myself get up and clean a little each day around the house as well as changing loads in the wash. I have a timer and get up and move around every hour. This has helped a ton, I feel better and I’m LESS tired!
This is crazy, but while I’ve been cleaning and doing more organizing around the house – I switched up our Febreze scent too! There’s a new Febreze AIR: Blood Orange that smells heavenly. I always love the more citrus smells so this was a no-brainer! I’m so glad we made the change to this scent!

How to Make Avocado Spinach Quinoa Salad
Ingredients You Need
- 1/2 cup uncooked quinoa
- 2 cups spinach
- 1 tomato, diced
- 1/2 cup diced cucumbers
- 1 tablespoon lemon juice
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- In a medium bowl, rinse the quinoa a few times.
- In a medium saucepan, boil 2 cups of salted water.
- Add the quinoa and continue to boil for about 10 minutes until the quinoa is tender.
- Drain the quinoa and let it cool.
- In a large bowl, combine the spinach, tomatoes, cucumbers, and quinoa after it has cooled.
- Combine the lemon juice, olive oil, salt, and pepper.
- Pour onto the salad and toss to coat.
- Season to taste with more salt and pepper.
