Cooking With Kids: Hash brown Egg Cups

 Cooking with kids is an awesome way to spend time with your little people while making some delicious food.  I have one boy that loves helping me in the kitchen and does a fabulous job preparing meals but then the older one wants nothing to do with it and he really never has.  It's just not his thing.

Last night my little guy and I made some Hash brown Egg Cups with cheese for supper and he did all of it himself, it was really just cracking eggs and mixing but he got to say he made them alone.  I love it!  That means his crazy blogger Mom got to stand by and take some action photos of him!

 How to Make Hash brown Egg Cups

Ingredients You Need

  • 20 Ounces Shredded Hash brown Potatoes
  • 1 Cup Shredded Cheese
  • 4 Eggs
  • ¼ Cup Onion
  • 1 Teaspoon Garlic Salt

Instructions

Step 1 - Pour the Hash Brown's into a large bowl

Step 2 - Add the cheese, egg, onion and garlic and mix well

Step 3 - Grease a regular sized muffin tin

Step 4 - Place large scoops in the muffin tins

Step 5 - Top with a sprinkle of cheese and bake at 350 degrees for 30 minutes

My little guy loved these not only because they taste delicious but because he could make them himself with just a little bit of supervision from Mom.  He's a pretty independent guy so he loves this kind of stuff.  I love it.

IMG_2088You could easily add some chopped ham, bacon or sausage to include in these Hash brown egg cups for a different variation.  They made a delicious breakfast, lunch or dinner.  I've also had grabbed them for a quick snack too.

  1. These look so yummy and easy! What do you think about making ahead and freezing them? Not sure if it would be better to freeze them uncooked or precooked. Any thoughts?

    1. I would precook them before freezing so that it would be as easy as heating them up in the morning compared to the time it would take to cook them for breakfast.
