We have another delicious casserole dish for you today, this one is a Mexican Dorito Chicken Casserole. This recipe is not what you would probably call a Healthy Recipe like a lot of the ones we have been sharing this month, but hey you can’t win them all. And this one is so darn yummy, it’s totally worth the extra calories!
After making this dish a couple times I think I have it down pat, at least for my family. First let me say, anytime you can add Dorito’s to a meal, lets do it cause it was yum. Second, you can never go wrong with adding more cheese, serious people load up those casseroles, you’ll thank me for it. Promise.
Lastly, I made a desperate effort to make this dish be more than chicken, chips and cheese by adding the lettuce and tomatoes on top but we all know I was grasping but it totally made me feel better about serving this Chips Casserole to my kids. Ok, on to the recipe!
How to Make Mexican Dorito Chicken Casserole
Ingredients
- 2 cups Diced cooked chicken
- 2 cups shredded Mexican cheese blend
- 1 (10 oz) can cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 1 can Rotel tomatoes (drained)
- 1 packet taco seasoning
- 1 large bag Doritos
- Shredded lettuce (optional)
- Diced tomato (optional)
- Black Olives (optional)
Instructions
Step 1: Pre-heat the oven to 350 degrees. In a large bowl mix together diced chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Rotel tomatoes, and taco seasoning. Mix well.
Step 2: Grease a 2-quart casserole dish, and add a layer of crushed Doritos across the bottom. Top with a layer of the chicken mixture. Add another layer of crushed Doritos, and then add another layer of the chicken mixture. Top with remaining cheese. You can add more crushed Doritos on top as well if you wish and remember LOTS of Cheese!
Step 3: Cover and place into the oven and bake at 350 degrees for 30-25 minutes until bubbling hot. Remove from the oven and top with lettuce, olives and tomato if you want to try and make this dish a little healthier.
This casserole is really good, but you could add some onions or even a jar of salsa to the mix to give it even more flavor. This is a great recipe to make for a potluck or casual party with friends, it always goes over pretty well!
