Easy Chocolate Raspberry Cheesecake Popsicles

Today I am sharing how to make my easy chocolate raspberry cheesecake popsicles with you. The best part about this simple recipe is grabbing the kiddos and having them make it all as I oversee the mess! Don't be scared because I said mess, it doesn't have to be one - my kids are natural mess makers.

 How To Make Easy Chocolate Raspberry Cheesecake Popsicles

INGREDIENTS
  • 4 oz Cream Cheese
  • ¾ C Vanilla Yogurt
  • ¼C Honey if sweeter popsicles are desired
  • 1 C Fresh Raspberries
  • For the graham cracker crust:
  • ⅓ C Graham Cracker Crumbs
  • 1 tablespoon Butter that is room temp.
  • For the chocolate coating:
  • Chocolate Magic Shell

INSTRUCTIONS

Step 1 - Wash the Raspberries with cool water.

Step 2 - Add Raspberries, Cream Cheese, Vanilla Yogurt and Honey into food processor. Blend together until smooth.
Step 3 - Pour mixture into popsicle molds leaving a bit of room for the crust. Then add a cake pop stick in the middle.
Step 4 - In a small bowl crush Graham Crackers once they are in crumb form mix with Butter.
Step 5 - Sprinkle the crust over the top of the popsicles in the mold.
Step 6 - Place into freezer until frozen well.
Step 7 - Once they are frozen solid remove from mold and pour chocolate coating over the popsicles. It is best to hold the popsicle by the stick facing downwards and let the chocolate coating run down on it's own.

As you can see, my little guy was thrilled to be able to spend time in the kitchen with me and I was super happy to have a fun treat to share with them. It was so easy to make that we brought a bunch to give out to the kids at our last family reunion. Chocolate covered raspberry cheesecake popsicles were a bit hit and next time I will make sure to make some for the adults, too!
