I love a good simple, basic BLT- we eat them quite often. But sometimes even your favorite go to meal needs a little dressing up, in this case as I was picking out a tomato for our regular BLT’s I noticed the green tomatoes and since I also love fried green tomatoes it clicked in my mind that the two together could create a heavenly combo. Ding! I also decided that since I was making my BLT a little fancier that it deserved something a little nicer than mayo to compliment it- Garlic Aioli was a perfect choice.

Garlic Aioli
Ingredients:
2 T. mayonnaise
1-2 cloves garlic
1/2 tsp. lemon juice
Directions:
Crush or finely dice garlic.
Whisk mayonnaise, garlic, and lemon juice until well combined.
I don’t want to tell you how to assemble your BLT’s, it is totally a matter of preference, but here is the best way I have found to put them together…
First, in my humble opinion lightly toasted bread is the best for BLT’s.
Then you want to lightly spread Garlic Aioli on both pieces of bread.
Next I like to layer lettuce on the bottom, then tomato, and top with the bacon, lots of good crisp bacon.- made in the oven. Never made it that way before? Please try it because it is the easiest, and least messy way to make it.
To cook bacon in the oven- Spread pieces out in a large baking sheet with a lip. Place in 400 oven (do not preheat) and bake for 20 minutes or until crisp. Drain on a paper towel lined plate.
