Giant Chocolate Chip Cookies

December 2, 2015   |   Leave a Comment

Is there anything better than the holidays with all the amazingly delicious Christmas Cookies we make and sample?  It’s the absolute perfect time of year to bake these heavenly sweets for yourself and guests.  I have a Christmas Cookie Bake a couple weeks ago with my Sister-In-Law and friends, we made several delicious recipes that I’ve been sharing with you over the weeks.

Our first recipe was Mom’s Almond Shortbread Cookies and last week was an amazing Almond Sugar Cookie (my favorite).  Today we have Giant Chocolate Chip Cookies that came from my Sister-in-law, Emily.  These are her families favorite!

Christmas gingerbread biscuits, candy canes and mince pies forming an abstract background border over old parchment paper.

While you’re here be sure to check out all the amazing recipes we had last year too over HERE!

How to Make Giant Chocolate Chip Cookies

Ingredients You Need

Ingredients:
2 1/4 cup flour
1 tsp baking soda
1 1/2 tsp cornstarch
1/2 tsp salt
3/4 cup unsalted butter
3/4 cup brown sugar
1/2 cup sugar
1 egg + 1 egg yolk
2 tsp Rodelle Vanilla
1 cup chocolate chips [I like 1/2 cup dark chocolate chips and 1/2 cup milk chocolate chips :)]
Instructions

In a large bowl mix together the butter, brown sugar and granulated sugar on medium speed until it’s light and fluffy.

Next mix in the egg and Rodelle Vanilla, scrape down the sides as needed

In a separate bowl, combine the flour, cornstarch, baking soda and salt, and mix to the butter mixture slowly until it’s well combined

The cookie dough will be very thick, stir in the chocolate chips, cover tightly and chill for at least an hour.

Remove the cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes while you preheat the oven to 350 degrees.

Place 1 Tablespoon of dough that has been made into a ball on a cookie sheet with parchment paper and bake for 9 minutes until they are barely golden brown. Transfer to a rack to cool and enjoy! A great way to make these more festive is by using Holiday M&M’s!

These cookies are such a favorite of everyone and one of the first to be devoured!  They’re amazing with a glass of milk and make a great Santa Clause cookie to leave out on Christmas Eve!

One of the most important ingredients we use in our baking is Rodelle Vanilla, I know a lot of people think this ingredient isn’t that important in recipes.  I’m tell you, it is.  When you start using a vanilla like Rodelle you will taste the difference in every recipe and it will end up being one of those ingredients you want to add to every recipe!

Rodelle Vanilla

Rodelle Pure Vanilla Extract is our signature vanilla product. Our pure vanilla extract is produced from the highest-quality Bourbon vanilla beans. Our percolation process produces a superior vanilla extract containing one of the highest vanillin levels in the market.  Made with pure natural hand selected vanilla beans, Rodelle Pure Vanilla Extract offers a deep, rich, natural flavor.
