Gluten Free Peanut Butter Cheesecake

Boy do I have a delicious dessert to share with you guys today AND it’s Gluten Free!  That means just about everyone can enjoy this dessert! It’s a great option for the holidays or really any time of the year!

This simple Gluten Free Peanut Butter Cheesecake is one of those easy desserts you’ll want to make again and again!

Delicious Gluten Free Peanut Butter Cheesecake!

How to Make Gluten Free Peanut Butter Cheesecake

Crust Ingredients:
1/4 cup melted butter
1 cup almond flour
1 TBSP Truvia
Filling Ingredients:
8 oz cream cheese; softened
8 oz Neufchatel cheese (1/3 less fat cream cheese); softened
1 1/2 cup all natural peanut butter
1/2 cup Truvia
1 1/2 cup whipping cream
Reddi whip (optional)
Chocolate syrup (optional)
Chocolate shavings (optional)

Directions:
Preheat oven to 350 F
Combine melted butter, almond flour and Truvia.
Press into a spring form pan and bake for 10 minutes.
Let it cool completely before adding filling.
In a bowl, combine softened cream cheese, Neufchatel cheese, peanut butter and Truvia  and beat until smooth.
In a separate bowl, beat whipping cream on high until stiff peaks form.
On low speed, gradually add whipping cream to the cream cheese and peanut butter mixture until well combined.
Pour filling over cooled crust.
Refrigerate for at least three hours before serving.
Garnish with chocolate syrup, chocolate shavings and Reddi Whip if desired.
