Back to school time is officially here! We’ve picked out new outfits, backpacks and purchased all the supplies we need. The boys have their lunch bags and lists of what to pack in them. Now we need to tackle breakfast, quick ideas and recipes that will fill their tummies before they walk out the door!
Today I made some delicious mini pancake muffins using only five ingredients! How much easier could it get?! Check out the simple recipe below!
How to Make Pancake Muffins
Ingredients You Need
- 2 Cups of Pancake Mix (you can use homemade or boxed)
- 2/3 Cup Horizon Organic Milk
- 2 Eggs
- 1/2 Cup Maple Syrup
- 1 Cup Blueberries or Chocolate Chips (I used 1/2 of each)
Instructions
Step 1 – Mix together the pancake mix, Horizon Organic Milk, Eggs and Maple Syrup
Step 2 – Fill your greased muffin tin 3/4 full, I used a mini muffin tin
Step 3 – Add the blueberries on top
Step 4 – Bake for 15 minutes or until cooked through
Step 5 – Top with Maple Syrup
These little muffins freeze well and make a quick and easy breakfast on busy school mornings. My guys are able to pull out what they want from the freezer and microwave them for about 60 seconds before they inhale them with a big glass of Horizon Organic Milk.
