Simple Fruit Salad with a Sweet Citrus Dressing

I’ve been trying to come up with healthy snacks to munch on throughout my day that still hold on to that last bit of summer we have left. Today I put together this delicious and simple fruit salad. I packed in some of my favorite summertime fruits that I know won’t be in season for much longer!

To give it more flavor I added a sweet citrus dressing (yummm). I kept things light and healthy by using Truvia. It was so good my boys ate my salad for an afternoon snack and insisted that I make them their own to take to school!

You’ll love how easy and delicious this sweet citrus dressing is to make!

Ingredients:

  • 4 Pints of Strawberries, Halved
  • 2 Pints Blueberries
  • 2 Cups Red Grapes, Halved
  • 2 Cups Green Grapes, Halved

Sweet Citrus Dressing: 

  • 1 Cup Truvia
  • 1 Cup Water
  • Juice of 1 Orange
  • Zest of 1 Orange
  • 1 Tsp Vanilla Extract

Directions:

  1. In a small sauce pan stir in Truvia, water, orange juice and orange zest.
  2. Bring to a boil, then turn the heat to a low simmer for 15-20 minutes to thicken slightly.
  3. Set aside to cool, store in fridge until cold. 
  4. Mix together all the fruit in a large bowl and pour dressing over the top, tossing gently, and serve.

**This makes the big 4 qt. bowl. Great to take to get togethers or to snack on all week!
