Sloppy Joe Casserole

Sloppy Joe Casserole is a recipe that my Mom made for my family and I a few years back.  We ended up loving it and I added it to our menu rotation.  It’s one of those recipes that sounds a little wonky but tastes amazing.  Plus, it’s simple to make.  I think she had gotten it from a Betty Crocker cookbook years ago and made it her own, but I’m not sure on that!

I’m going to share my version with you today.  This is a recipe that could easily be changed to add vegetables that your family loves.

How to make Sloppy Joe Casserole

Ingredients You Need

  • 1 Pound Ground Beef
  • 1/2 Cup Onion, chopped
  • 1/2 Cup Green Pepper, chopped
  • 1 (15 ounce) Can Tomato Sauce
  • 1 Tablespoon Brown Sugar
  • 1 Box of Jiffy Corn Muffin Mix
  • 1/3 Cup Milk
  • 2 Tablespoons Vegetable Oil
  • 1 Egg
  • 1 Cup Shredded Cheese

Instructions

Step 1 – Preheat oven to 350 degrees

Step 2 – In a skillet cook the beef, pepper and onion over medium heat until it’s browned, drain any grease

Step 3 – Stir in the brown sugar and tomato sauce.  Cook for 5 minutes until boiling

Step 4 – In a small bowl prepare the corn bread mix with the milk, oil and egg until it’s just moistened

Step 5 – Spoon the beef mix into an 8 inch baking dish

Step 6 – Sprinkle 1/2 cup of cheese over the beef

Step 7 – Spread the corn bread mix over the beef and cheese

Step 8 – Bake for 25 minutes of until the corn bread is browned, sprinkle the remaining cheese on top.  Enjoy!

This is such an easy recipe that goes over well with everyone!  I’ve added several difference veggies to ours but onions and peppers are our favorite!  I like LOTS of cheese on the top of mine, I use more than 1/2 cup most of the time!
