Soft Chewy Peanut Butter Cookies with Chocolate chunks have got to be one of the most perfect cookies! These are a great cookie to make for Christmas this year if you are going to be baking too!
I’m excited to share this recipe with you today and I had the chance to play with a Canon DSLR last week. I’m in love, not just with the cookies but the camera is amazing.
I cannot believe how great the photos turned out and when I take the photos I sound like a photographer. Serious, it sounds so professional. I know that’s not an excuse to buy a new camera, but it is an awesome bonus!

How to Make Soft Chewy Peanut Butter Cookies
Ingredients
- 1 cup creamy peanut butter
- 1 cup light brown sugar, packed
- 1 large egg
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda
- 1 cup semi-sweet chocolate chunks (you could use candy bar pieces or chocolate chips too)
Directions
Combine peanut butter, brown sugar, egg, vanilla, and beat on medium-high speed until well-combined and the sugar is fully incorporated.
Add the baking soda and beat to incorporate. Add the chocolate chunks and finish mixing them in by hand to just incorporate.
Preheat oven to 350F. Prepare two baking sheets with Silpat or parchment paper.
Using a 2-inch cookie scoop, form dough mounds and place on prepared baking sheet, spaced 1 1/2 inches apart.
Bake for 8 to 10 minutes, until edges are set and tops are barely set, even if slightly under baked in the center, they will continue to bake on the pan when you take them out of the oven.

My family loved these. Thie first time I made them by hand with chocolate chips. The second time I was making a bigger batch so I used my ninja with the dough blade….yeah, no. It basically separated the peanut oil from the rest and made the dough very stiff and wouldn’t hold the butterscotch chips very well. Oddly enough, they baked fine and still tasted amazing. But lesson learned. Some things are best by hand!!
