Summer Recipes: Grilled Pineapple

One of my favorite things about summertime is being able to cook everything on the grill! I love summer recipes that require the use of the grill over the oven, this includes delicious fruits too!

I wanted to add something sweet to dinner without having to turn on the oven and decided on grilled pineapple (my mouth waters just thinking about it). The great thing about grilled pineapple is that you can keep it simple and have it as a side, or you can easily turn it into a yummy dessert!

I used Truvia Brown Sugar Blend to keep the calories down. You will love how easy this recipe is and how few ingredients you will need! This is one the entire family will enjoy!
Ingredients:
1 whole pineapple
½ teaspoon ground cinnamon
1 tablespoon warm water
Vanilla Ice Cream
Ground Cinnamon for garnish
Sliced pineapple pieces for garnish

Directions:

Preheat an outdoor grill.

In a small bowl, combine brown sugar, cinnamon and water. Mix well until wet. It will appear dry at first, just give it a minute of mixing and it will come together well.

Set aside.

Meanwhile, remove the top, bottom and skin/sides of a pineapple. Cut into ½" rounds and remove the center core if desired. I used an apple corer.

Place pineapple rounds onto a pre-heated grill and use a brush to cover one side with a generous amount of the sugar mixture. Close lid and heat for 2-3 minutes before flipping and heating for another 2-3 minutes.

Serve with vanilla ice cream garnished with a pineapple slice and ground cinnamon.
