Once you make this amazing Sweet Potato Casserole, it’s going to be a new tradition for thanksgiving. It’s to die for and to be completely honest should probably be classified as a dessert because it is so rich and sweet.
It’s also easy to make, you really just throw everything in the mixing bowl and mix it together before you top it with all the yummy toppings. Super easy recipe to make!
This is always one of the first side dish recipes to be devoured at Thanksgiving and if by chance there is anything left, my Dad takes it all home with him. I should really start making him his own dish to have for himself, or maybe just a second batch in the freezer to pull out for him to take.
How to make Sweet Potato Casserole
Ingredients:
- 3 cups mashed sweet potatoes
- 1 cup brown sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1/2 cup milk
- 1/2 cup melted butter
- Topping:
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup melted butter
- Marshmallows
Instructions
Combine first 6 ingredients.
Pour into a buttered 1 1/2 to 2-quart casserole dish.
Mix remaining ingredients together and sprinkle over top. I made rows and alternated the brown sugar mixture with the marshmallows.
Bake at 350° for 30 to 40 minutes, until hot and browned.
Serves 6 to 8.
I have also made this in the slow cooker in the past and it turns out perfectly. If you do that, you would want to cook it on low for about 4 hours. Add your marshmallows and topping towards the end of the 4 hours.
You do not need to add the marshmallows to this casserole, I do because my Mom makes her Sweet Potatoes with marshmallow topping so I always will too. It just adds a little bit extra to the dish!
