Yummy Zucchini Bread Recipe

I grew up having Zucchini bread every summer, my Mom and my Grandma used to make it and I loved it.  There was nothing better than warm zucchini bread with a good amount of butter spread over it and having that as a delicious snack.  Yum!

I think I’ve mentioned before that my Mom has the largest garden in Iowa, that may be an exaggeration but seriously people this thing is monstrous.  It can easily feed our entire family for most of the year.  So, I’m lucky to get a lot of fresh produce from her including a big bag of fresh zucchini that I quickly turned into zucchini bread for the family.

How to make Zucchini Bread

Ingredients You Need

  • 2 Cups of grated Zucchini
  • 1 Cup of Brown Sugar
  • 2/3 Cup Oil
  • 1 Teaspoon Vanilla
  • 2 Eggs
  • 1 1/2 Cup Flour
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Salt

Instructions

Step 1 – Preheat the oven to 350

Step 2 – Wash and grate the zucchini, I used the food processor and it took about 2 medium sized zucchini

Step 3 – Using a mixer, combinte the brown sugar, vanilla, oil and eggs

Step 4 – In a separate bowl combine the flour, baking soda, baking powder, cinnamon and salt

Step 5 – Add the zucchini into the wet mixture and mix well

Step 6 – Add the flour mixture to the wet mixture and mix well

Step 7 – Pour the batter into two greased bread pans

Step 8 – Bake for 45 minutes or until a knife inserted comes out clean. Enjoy with butter.

Zucchini bread makes a delicious snack or breakfast too!  It goes fabulously with a hot cup of coffee.
