Chex Mix Recipes: Caramel Chex Mix

Hi, everyone!  I hope that you are having a fabulous weekend!  I am excited to be starting a 20 days of Christmas Cookies series with you!  Everyday (except Sunday) until Christmas I will have a new Christmas cookie or treat recipe.

Some of these will be recipes that I use every year or new recipes that I have decided to try.  I also have several Guest Posts from other bloggers and friends who will be sharing their favorites ( I do still have a few days left if you would like to join in and share, just email me!)

Since Today is December 1, lets get the cookie and treat baking started!  I usually start my baking early, most cookies freeze nicely so that I can bake a little at a time through out the month.

Caramel Chex Mix Recipes

You can use either Crispix or Chex mix to make these delicious Chex mix recipes.   Both cereals work well, I happened to have Crispix on hand the day that I made this.

This is recipe is one of my very favorites.  But seriously, it is very addictive.  I cannot but it down once I start eating it.  How can anything that has four sticks of butter be bad?  Yikes!  Yes, four sticks of butter!  This is why I only make it at the holiday season and not on a regular basis.  Do you make any other Chex mix recipes?

Ingredients

  • 2 small boxes of Crispix Cereal
  • 2 cups of butter
  • 2 cups of brown sugar
  • 1/2 cup Light Karo syrup
  • 1/2 tsp Vanilla
  • 1/2 tsp Baking Soda

Instructions

  1. Melt butter in a sauce pan.
  2. Add brown sugar and bring to a boil.
  3. Add Karo syrup, vanilla and baking soda.
  4. I put the cereal in a large bowl then pour mixture over the top and stir.
  5. Then pour into a brown paper sack.
  6. Microwave for two minutes and shake.
  7. Microwave again for two minutes and shake.
  8. Spread the Crispix onto wax paper and let cool.
  9. Enjoy!

    Would like to make this but I am not sure how much crispix to use. It calls for 2 small boxes but all I have ever seen is big boxes of crispix.

    I just made this and it makes a very large amount, so it’s great for holidays. I used 1 box Crispix and half box chocolate oreos, half box pb cereal and fall colored M&m’s (I was very surprised the candy coating survived the microwave and all the shaking lol). It tastes delish and looks so great for fall with all the pretty browns and m&m’s. Thanks for sharing your recipe!! Maybe next time I will throw in some pretzel sticks or pb filled pretzels for a little salty.

    Wow this stuff should come with a warning label! So delicious! Perfect mix of salty, sweet, and crunchy. We made this for our movie night snack and it was perfect. I am going to pack it in cute containers for my daughter’s teachers as an end of year gift with a gift certificate. Found on pinterest.

    Would this work with a butter substitue (like smart balance light), my gradaughter has to be dairy free.

      I have never made it with anything other than butter, but I don’t see why it wouldn’t work. Good Luck!

    I hat butter so bad I could not make anything with 4 sticks of butter. Could you use oil? I always use oil instead of butter. It looks so good.

    How many cups does this recipe make? I was thinking of making this to put into small containers and give to co-workers. Sounds YUMMY!

      It makes A LOT! I put 2-3 cups worth in baggies for 5 neighbors and still have a large ziploc bag full!

    Just made this today, but I baked it in a bar pan for 20 mins instead of microwaved. Every 10 mins I took it out and mixed it up. I think baking it helps it be more crunchy and easier to handle. This also makes a lot, I halved the recipie! Very good though, and I used Rice Chex instead. Still yummy!

      Yes, I have drizzled chocolate over mine in the past and it is delicious. I added sprinkles too on my last batch. 🙂

    Hmm, I don’t understand why you need to microwave it? If the sauce is already cooked why do you have to cook it again?

      Jenny, I think it caused it to harden. Maybe I am wrong but I think it would be gooey otherwise. Kind of like when you bake caramel corn to make it crunchy and hardened. This is a crunchy snack.

    I;ve been making this for years…I call it Christmas Crunch. I also add 1 can of mixed nuts, 1 can of cashews and a bag of fritos. I use a big roaster pan, sprayed with cooking spray, dump all dried ingred in it then add the syruo mix. I then bake it for 10 min at 350 and then stir and bake for 10 min more. I stir well and dump it on Pam sprayed foil and then i stir and stir till cool and not clumped togeter…Delish!

    What if you don’t have a brown paper bag? Can you cook it in something else in the microwave?

      I haven’t tried just cooking it in a bowl and stirring it but instead of shaking in a bag but that may work!

      I have made microwave caramel corn using a bowl instead of a bag. Works just a good as a bag. But be sure your microwave is big enough for the bowl.

      I skip the bags entirely, and just used a bowl with a lid. I alternated stirring and shaking (with the lid on), and it worked like a charm. I was able to fit the giant bowl into my microwave though, so that’s a factor to consider…

    I’ve done this with popcorn, thanks for finding the recipe for me … no need to use the bowl, just put the cereal in the brown bag, pour the caramel on top, fold over and shake, nuke, shake, nuke, shake – less clean up!!
