Asparagus Egg Bake

Delicious Asparagus Egg Bake that makes a great breakfast lunch or dinner! We love fresh asparagus in the spring here in Iowa and use it in tons of different recipes, like our Grilled Asparagus Salad.

I absolutely LOVE this recipe, maybe because I am obsessed with asparagus but it’s a great meal! I think I’ve mentioned before how my Dad shared his “secret” asparagus patch with me here in town and now my son and I are always running out in the spring and summer to check for fresh asparagus! Not only is it a fun hobby for us together but yummy too!! Check out our recipe!

Asparagus Egg Bake Recipe

Ingredients:

  • 8  asparagus spears, cut into bite-sized pieces
  • 4 eggs, room temperature
  • 2 tsp. olive oil
  • 1 tsp. garlic
  • Salt and pepper
  • 2 T Parmesan cheese

Directions:

  1. Preheat the oven to 400 degrees
  2. Spray the bottom of a small baking dish with nonstick cooking spray
  3. Place the cut up Asparagus in the bottom of the dish and bake for 10 minutes
  4. Remove the dish from the oven and carefully slide the two eggs on top of the asparagus and bake for five minutes
  5. When the eggs appear slightly set, remove from the oven and top with a sprinkle of garlic, salt, pepper and Parmesan Cheese
  6. Place back in the oven for 3 minutes
