Delicious Asparagus Egg Bake that makes a great breakfast lunch or dinner! We love fresh asparagus in the spring here in Iowa and use it in tons of different recipes, like our Grilled Asparagus Salad.
I absolutely LOVE this recipe, maybe because I am obsessed with asparagus but it’s a great meal! I think I’ve mentioned before how my Dad shared his “secret” asparagus patch with me here in town and now my son and I are always running out in the spring and summer to check for fresh asparagus! Asparagus Egg Bake Recipe
Ingredients:
- 8 asparagus spears, cut into bite-sized pieces
- 4 eggs, room temperature
- 2 tsp. olive oil
- 1 tsp. garlic
- Salt and pepper
- 2 T Parmesan cheese
Directions:
- Preheat the oven to 400 degrees
- Spray the bottom of a small baking dish with nonstick cooking spray
- Place the cut up Asparagus in the bottom of the dish and bake for 10 minutes
- Remove the dish from the oven and carefully slide the two eggs on top of the asparagus and bake for five minutes
- When the eggs appear slightly set, remove from the oven and top with a sprinkle of garlic, salt, pepper and Parmesan Cheese
- Place back in the oven for 3 minutes
