Hey, guys! Here at The Taylor House we have a lot of changes happening. We're moving soon, the kids will be on summer break in a new state and meeting new friends. Things are getting crazy over the next few weeks!
We are also making some changes with out diet when we move. We're trying to eat healthier, incorporate more greens and fruits into our diet and cut out the chips and junk that we admittedly eat way too much of!

I recently started using the Evolution Fresh products that have really inspired me to eat healthier. I can really say that when I have one of their cold-pressed drinks, I feel better!
Just last week, I was trying to decide what to have for lunch and was trying really hard to find something that was a better option than my usually fast food fun with a large pop (yep, some of you know this is sadly true). I decided to make an Avocado Egg Salad Sandwich that was amazing! Check it out!

How to Make Avocado Egg Salad Sandwich
Ingredients You Need
- 4 Hard Boiled Eggs, Chopped
- 1 Large Avocado, Peeled, pitted and chopped
- 2 Tablespoons Plain Greek Yogurt
- ¼ Teaspoon Mustard
- Dash of Lemon Juice
- Salt and Pepper
Instructions
In a small bowl mix all the ingredients together until it's well mixed. Serve on toast with an Evolution Fresh Cold-Pressed drink on the side!
To make this even healthier, you could serve the Egg Salad in large lettuce leaves instead of on bread! I do that a lot of times with my different egg, ham and chicken salads. It's a great alternative!

Finding simple ways like this to make your meal a little more healthy has been a life saver for me. The reason I hesitate on switching to a more healthy diet is because I worry about forfeiting flavor and that's just not an option! Recipes like this Avocado Egg Salad help me get a little more nutrition into my diet and still love what I'm eating! Add in the Evolution Fresh and I'm golden!
