I mentioned a couple times in previous posts that we are trying to change our eating habits to a more clean eating and low carb diet. I’ve created a few recipes that I’ve been in love with because they taste really good and fall into our new eating plan. Like this Slow Cooker Stew.

I thought I would really miss the potatoes making this recipe, but I didn’t at all because it had great flavor. I’ve thought of a few more variations to this as well after our first time having it, so be on the watch for those too.

Beef and Mushroom Slow Cooker Stew

How to Make Beef and Mushroom Slow Cooker Stew

Ingredients You Need

  • 6 Cups Beef Broth
  • 2 Pounds Beef Stew Meat
  • 1 Carton Mushrooms, diced or sliced
  • 2 Cups Carrots, shredded
  • 1 yellow Onion, diced
  • 1 TBSP Garlic, Minced
  • 1 tsp Parsley
  • Green Pepper, diced (optional)
  • Celery, diced (optional)
  • Salt
  • Pepper

Instructions

Place all the ingredients together in a 6 Quart Slow Cooker and cook on low for 6-8 hours. This is really hot when it’s done so I like to turn it to warm for about a half hour and let it cool slightly.

If you’re not eating clean or on a low carb diet, you can add potatoes to this recipe as well.
