Sweet Potato Hash with Eggs that’s Healthy too – YES, PLEASE!
Last week my hubby and I booked a trip to Hawaii, and immediately decided that we needed to get into shape (skinny) before we go in April! The Holidays were brutal on our waistline and the thought of putting on a swimsuit was a bit nauseating.
Truth be told, I should have come to this conclusion long before we booked a beach vacation, I’ve been eating pretty unhealthy for some time now and sitting at a computer all day isn’t much exercise or activity.
I started to think about diets and how miserable I always am when I try them, it’s not a long-term solution for me. I really need to embrace a better way of cooking (at least part of the time) and start making healthier meals for me and my family.
One of my besties had tried a 30 Day Clean Eating challenge a couple months ago and looked really good, so we chatted and the rest is history. I’m a week deep into changing my eating habits and five pounds lighter too!
All of the recipes have to look and sound good to me if I’m going to make this work, so recipes like sweet potato hash with eggs on top are my type of recipes! Who knew something like this would be an option for a clean eating diet.
I’ve started to embrace the challenge of finding or creating recipes that don’t make me feel like I’m missing out on dairy or carbs – yep that’s right I gave them up for a month!
So, bare with me over the month – you’ll likely be seeing more healthy recipes while I make my way through this change in eating habits. I’ll admit that I do miss bread and cheese but not as much as I thought I would. I surprisingly didn’t get a headache when I gave up the coffee and soda either.
How to Make Sweet Potato Hash with Eggs
Ingredients You Need
- 2 Sweet Potatoes, diced with skin
- 1 Red Onion, Diced
- 1 Green Pepper, Diced
- 1 Cup Mushrooms, Sliced
- Olive Oil
- Salt & Pepper
- 4 Eggs
Instructions
Preheat the oven to 350. Pour a tablespoon of olive oil into a cast iron skillet and heat over medium heat. Add the onion and garlic, cook, until the onion is translucent. Next, add your sweet potatoes and mix together with the onion and garlic. Let it cook for about 8 minutes without mixing it. Add the green peppers and mushrooms to the sweet potato mixture and mix together. Cook for another 5 minutes. Make four indents in the vegetables to add your eggs. Pop in the oven for about 7 minutes or until the white of the egg is set. Add Salt & Pepper before serving!
Looks almost too good to be a healthy meal – doesn’t it? I like to leave my egg runny so that it kind of runs over the sweet potato and gives them a little sauce and a lot of flavor.
