Black Bean, Corn and Avocado Salad
With the New Year here, we’ve been trying to incorporate more healthy recipes options into our diet. Plus, we have a big Mexico vacation in a few months and we really need to shed some of our winter weight.
Here in Minnesota it gets really cold out and we seem to hunker down and eat bread and butter, or maybe that’s just me. I’m not sure but either way, I need to get back into shape for summer clothes!
I decided to use some of my favorite veggies along with a couple that I don’t typically use as often to make a light and refreshing salad that went perfectly as a side dish with Taco’s one night. Check out how easy it is to make!
