Black Bean, Corn and Avocado Salad
With the New Year here, we've been trying to incorporate more healthy recipes options into our diet. Plus, we have a big Mexico vacation in a few months and we really need to shed some of our winter weight.
Here in Minnesota it gets really cold out and we seem to hunker down and eat bread and butter, or maybe that's just me. I'm not sure but either way, I need to get back into shape for summer clothes!
I decided to use some of my favorite veggies along with a couple that I don't typically use as often to make a light and refreshing salad that went perfectly as a side dish with Taco's one night. Check out how easy it is to make!

How to Make Black Bean, Corn and Avocado Salad
Ingredients You Need
- 1 Can Black Beans (15 ounces), drain and rinse the beans
- 1 Cup Grape Cherries, halved
- 1 ½ Cups Fresh Corn
- 1 Red Onion, Diced
- 2 Avocado's, Diced
- 1 Cucumber, Diced
- 3 Tablespoons Olive Oil
- 2 Tablespoons Lime Juice
- ¼ Cup Cilantro
- Salt
- Pepper
Instructions
Step 1 - In a large bowl place all the vegetables and mix together
Step 2- Pour the Olive Oil and Lime Juice over the vegetables and mix again
Step 3 - Refrigerate and keep chilled until you are ready to enjoy!
This is so fresh and delicious, during the summer months when we have fresh vegetables it's just that much more delicious!

This is not just a fresh and healthy summer salad though it makes a really delicious salad any time of the year. I ended up having the leftovers of this yummy dish as lunch two days in a row. You could even add some diced chicken if you want a little more to it.
