BLT Chicken Salad

This is one of my favorite salads, coming in as a close second to the Chili’s Enchilada Explosion {soooo yummy!}. 
I think the great thing about salads is that you can add about anything and give it a new or different twist.  Plus, if you come across a recipe with ingredients that you don’t like, you can just leave them off.  The recipe for this is at the bottom of the page.
Enjoy!

BLT Chicken Salad

 

  • 8 cups torn salad greens
  • 2 large tomatoes, chopped
  • 1 1/2 pounds boneless skinless chicken breasts, cooked and cubed
  • 10 bacon strips, cooked and crumbled  { I used 5}
  • 2 hard-cooked eggs, sliced

 

 

  • 1 cup of chunked Mozzarella Cheese
  • 1 cup of Red Onion
  • Italian Dressing {we used Kraft House Italian}

 

Toss the lettuce and red onion together and place on your plate, add the rest on the ingredients on top and drizzle with the dressing.
