Delicious Blueberry Crumb Bars
Delicious Blueberry Crumb Bars are the perfect dessert or even breakfast (with or without the ice cream).

If I had to pick my favorite dessert, it's going to be something with fruit. I love lemon, strawberry and blueberry desserts, I'd pick the over chocolate any day of the week.
These Blueberry Crumb Bars quickly became a new love for not just myself but for my guys too, we actually devoured an entire pan in a day! Yep, they were that good and I kept thinking they would make a delicious breakfast too!

How to Make our Blueberry Crumb Bars
Ingredients
For the Blueberry Layer:
3 cups fresh blueberries
½ cup sugar
3 teaspoons cornstarch
For the Dough Layer:
1 cup sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup unsalted butter (2 sticks)
1 egg
Instructions
Step 1 - Mix together the sugar and cornstarch, gently mix in the blueberries and set aside
Step 2 - Next, mix together 1 cup sugar, 3 cups flour and baking powder.
Step 3 - Use a fork to blend in the butter and egg, the dough will be crumbly
Step 4 - Pat half of the dough into a greased 9x13 pan.
Step 5 - Add a the blueberry mixture next and spread evenly over the crust.
Step 6 - Spread the second half of the dough over the top of the blueberries.
Step 7 - Bake at 350 degrees for 45 minutes. Remove from the oven and eat warm with vanilla ice cream.
