Breakfast Strawberry Parfait Recipe

Are you like me and usually drink a cup of coffee for breakfast without taking time to have something to eat?  The school year is the worst, I am in such a hurry getting my kids up and going that it’s usually 10 am before I remember to eat. 

This week my boys were at Grandma and Grandpa’s house for a few days, so I was on my own during the day.  I decided to make myself a breakfast on time and I made myself something that I wanted to eat and enjoy without the boys complaining that they wanted pancakes. 

I made a simple Breakfast Strawberry Parfait by using three simple ingredients.  I made my parfait in a mason jar and thought this would be handy for on the go parents who had to eat breakfast at work or just away from home.  Plus, it looked super cute in the jar!

How to Make a Strawberry Breakfast Parfait

Ingredients

  • 1 c Fage Greek Yogurt (I also stir in a little pure maple syrup since it’s natural and unsweetened).
  • 1/2 c rinsed, strawberries – cut in small pieces
  • Granola, I used the Honey Bunches of Oats Granola

Instructions

Step 1 – I started with a scoop of strawberries in the bottom of the jar. 

Step 2 – Add a layer of Granola

Step 3 – Next, add your yogurt

Step 4 – Another layer of strawberries, granola and then yogurt

Strawberry Parfait

This is a simple healthy breakfast option that you could use any day of the week or it looks fancy enough to serve at a brunch or party too.

You can use any type of fruit in these parfaits.  Bananas, Apples, or a mixture of berries would all be delicious!  These are a great way to use up the little big of fruits that you have left over from lunch or dinner.
