It’s fall here in Iowa and that means we’re breaking out the slow cookers and making all the delicious soup recipes. A few of my favorites are chili and of course this simple broccoli cheese soup. There’s just nothing that’s quite like coming home in the evening to the delicious aroma of a soup waiting for you in the slow cooker. That’s my kind of fall evening!
Something even better I found was this yummy Moon Cheese to use as croutons for my soups. The best part about these is that they are 100 % CHEESE! Nothing else added, just a delicious crunch of that cheesy goodness I crave!
I’m going to be honest, I learned all about Moon Cheese in Chicago at the Sweets & Snacks Expo. This was in May and since then I’ve had to reorder Moon Cheese three times before I took photos of my recipe. I kept eating them as a snack! I think I may be slightly addicted to these crunchy little guys.
The best part is that they’re high in protein, all natural, gluten free and an excellent source of calcium. The best snack to grab on the go!
How to Make Broccoli Cheese Soup
Ingredients You Need
- 4 Cups Chicken Broth
- 2 Cups Broccoli, fresh or frozen
- 15 oz. Evaporated Milk
- 1 TBSP Garlic, Minced
- 1 Small Onion, Diced
- 2 Cups Cheddar Cheese, Shredded
Instructions
Bring the chicken broth, garlic, and onion to a boil in a large pot. Add in the broccoli, evaporated milk and shredded cheese and simmer for 30 minutes or until the broccoli is tender.
Use Moon Cheese as the croutons for this soup to give it an extra cheesy delicious taste!
