Caramel Pecan Topping for Pumpkin Pie

Can you believe that Thanksgiving is just around the corner?  We’ve already started to plan and buy ingredients and everything we’re going to need for the best meal of the year!

To be honest, Thanksgiving Dinner is a lot of work.  Right?  I try my hardest to make most of the dishes that I can, the day before so that on Thanksgiving I can spend it with my friends and family.  But there’s so many things that can’t be made up ahead of time or taste better made the day of.

Like Pumpkin Pie, There’s something about warm pie right out of the oven.  I’ve found that I can pick up Marie Callender’s Pumpkin Pie at Walmart and turn it into an amazing dessert that my family goes nuts over.

The pie is pretty darn good on it’s own but with this Caramel Pecan Topping we made, it takes the pie to a whole new level of amazing.  Topped with Reddi Wip and it’s a slice of heaven!

How to Make Caramel Pecan Topping

  • 1/2 cup Brown Sugar, packed
  • 2 Tbsp Heavy Cream
  • 1 Tbsp Light Corn Syrup
  • 1 Tbsp Butter
  • 1/2 cup Pecans, chopped
  • 1/2 tsp Vanilla Extract

Place the brown sugar, cream, corn syrup, and butter to a small saucepan over medium high heat.

Bring to a boil, then reduce heat and simmer, uncovered, for a few minutes, stir frequently.

Remove from heat and stir in chopped pecans and vanilla.

The topping will thicken as it cools.

Spoon topping over cooled pumpkin pie slices and top with Reddi Wip

Who knew that a store bought pumpkin pie could be so delicious?  And it looks so good you don’t even have to tell anyone you didn’t make it yourself!

Something else we love to have the evening of Thanksgiving is hot cocoa while we sit around and watch movies or play card games.  Swiss Miss and Reddi Wip are always on hand to make a delicious warm drink that everyone loves.
