Chocolate Chip and Gelato Sandwiches with Dark Chocolate

Ice cream is a way of life around here. We’ll eat any kind of frozen treat: popsicles, ice cream, gelato. We love it all. No matter how healthy we eat, there’s always room for a creamy sweet scoop at the end of the day. Recently, my husband and I started exploring gelato and fell in love with how creamy and rich it is.

Chocolate Chip and Gelato Sandwiches

Our favorite is HemisFares from Kroger. It’s a high-end Kroger brand that tracks the country of origin for every product that it creates. If you want Italian pasta, it can tell you exactly where it came from in Italy. Spanish olives from Spain; and of course the absolute best Gelato sourced from Italy. As a matter of fact, check out the Find Numbers on each product. They tell a story about where each product was tasted and sourced.

My husband and I got hooked on it when we figured out that they had pistachio gelato, which we both love but don’t really see very often. (Find No. 56)Then we discovered hazelnut (Find No. 55), which is also a favorite. But my kids loved the sweet cream with the dark chocolate chunks (Find No. 52)

HemisFares Gelato is AMAZING!

This past weekend my kids were trying to find something fun to do with me in the kitchen, and as we were digging around in the freezer, they wanted to make homemade ice cream sandwiches. This was such an easy thing to do, but it was so much fun with our kids. It has been a long time since the whole family had that much fun together in the kitchen.

We actually went by our favorable coffee shop and got bakery-style chocolate chip cookies to make ice cream with, you know, the big ones that are firm and chewy. We didn’t want the cookies to be too crunchy, because we didn’t want them to fall apart when they were frozen and you bit them. We also didn’t want them to be too soft so that they wouldn’t hold up from being smushed with all the ice cream in the middle. (You can tell we thought about this a lot!) There’s a local coffee shot here that does big, gigantic chocolate chip cookies that we all love.

Then we used pretty much all of our favorite flavors of HemisFares gelato – and we made homemade ice cream sandwiches with big bakery cookies. My favorite ended up being the hazelnut. My husband loved the pistachio, and of course, my kids loved the sweet cream.

Because my kids are kids and they were very excited to be playing in the kitchen, we melted some dark chocolate and added a tablespoon of coconut oil to help keep it creamy, and then thought we would dunk the ice cream sandwiches and then refreeze them. That ended up being a massive mess!! So we took the warmed, melted chocolate and put it into a sandwich bag and just nicked the end and then drizzled it across the ice cream sandwiches and then froze them again.

The were amazing, rich, very, very rich, and messy when we started eating them. And so much fun. My kids laughed so much, it was one of the best afternoons we’ve spent together in a long time.
