Pepsi in Cake? This was my oldest sons reaction when I told him what I was making Saturday morning. Followed quickly by something like: That’s disgusting and I’m not eating it. Fastforward about an hour and half of the Chocolate Pepsi Bundt Cake was gone and I was instead hearing: That cake is amazing. Oh, boys! Gotta love them.
We’ve all heard of the recipes where people use soda in place of other ingredients and I had been wondering how the cake would turn out. I am in no way claiming that this cake is any where near to healthy but it’s so delicious! Topped with a yummy chocolate ganache frosting and you have the perfectly easy dessert! How to Make Chocolate Pepsi Bundt Cake with Chocolate Ganache Frosting
Ingredients You Need
Cake
- 1 Box of Chocolate Cake Mix
- 1 5 ounce box of Chocolate Pudding Mix
- 1/2 Cup Sour Cream
- 1 Egg
- 12 oz can of Pepsi
- 1 Package of Mini Chocolate Chips
Frosting
- 1 Cup Heavy Whipping Cream
- 1 Cup Milk Chocolate Chips
- 1 Tablespoon Room Temp Butter
Instructions
Step 1 – Mix together the cake mix, sour cream, egg and Pepsi in a large bowl
Step 2 – Add the pudding mix and incorporate well
Step 3 – Fold in the chocolate chips
Step 4 – Pour into a greased bundt pan and cook at 350 for 35 minutes
Step 5 – After the cake is finished cooking make the ganache frosting by melting the chocolate, heavy cream and butter in a pan on the stove – be sure to stir constantly
Step 6 – After it is completely melted pour it over the cake. Enjoy!
Ok, seriously, tell me that chocolaty goodness doesn’t look amazing?! To be completely honest with you, I could drink chocolate ganache with a straw. It’s so yummy and beyond easy to make. Just be prepared for the family to inhale this cake!
Also, you never go wrong with adding vanilla ice cream to chocolate cake. Remember that!
