We had an amazing trip to Mexico a few weeks ago over spring break. I insisted that we stay at an all inclusive resort and I had plans to eat and drink myself into a sleep coma by the pool every single day. Let me tell you, my expectations for the trip where spot on! The food was amazing and so were the drinks.

Not only was the food delicious but it also motivated me to make some new recipes as soon as I got home. The very next day after our flight got in around midnight I was up in the kitchen creating some yummy recipes like these Coconut Buttermilk Pancakes.
