We had an amazing trip to Mexico a few weeks ago over spring break. I insisted that we stay at an all inclusive resort and I had plans to eat and drink myself into a sleep coma by the pool every single day. Let me tell you, my expectations for the trip where spot on! The food was amazing and so were the drinks.
Not only was the food delicious but it also motivated me to make some new recipes as soon as I got home. The very next day after our flight got in around midnight I was up in the kitchen creating some yummy recipes like these Coconut Buttermilk Pancakes. We had something very similar in Mexico and I wanted to bring that home with us. Check out the recipe!
How to Make Coconut Buttermilk Pancakes
Ingredients You Need
- 2 Cups Flour
- 1/4 Cup Sugar
- 2 1/4 Teaspoons Baking Powder
- 1/2 Teaspoon Baking Soda
- 2 Eggss
- 2 Cups Buttermilk
- 1/4 Cup Melted Butter
- 1/4 Cup Shredded Coconut
Directions
Step 1 – In a medium bowl, mix the flour, sugar, baking powder, baking soda and salt until it’s well combined.
Step 2 – In a small bowl, beat the eggs and buttermilk with a whisk.
Step 3 – Slowly pour in the melted butter and whisk quickly.
Step 4 – Pour the wet ingredients and the coconut flakes into the flour mixture and mix until it’s just moist.
Step 5 – Heat the skillet over medium and pour 1/3 cup batter to make a pancake. Cook until edges bubble and flip. Cooke the second side for about two minutes.
Serve with butter and Maple syrup!
If you’re not a coconut fan, you can add chocolate chips, raisins or other stir ins that you love.
