Creamy Garlic Mashed Cauliflower

Did the title of this recipe scare you a little?  Maybe not, since you’re here reading it but to be honest the thought of replacing my mashed potatoes with mashed cauliflower was a little bit frightening.  I love nothing more than a creamy garlic helping of mashed potatoes covered in cheese.

I’m on a mission though, to try out new recipes and find new additions to our weekly menu.  I have been so curious about the mashed cauliflower so the last time we had a pot roast, I made a pot of creamy garlic mashed cauliflower and I loved them!

    I was just looking for cauliflower recipes on Pinterest and read about a tip for cauliflower – someone put the boiled cauliflower in the oven for a while to dry it out. Then the consistency was lots better and not too soft/smooth. It sounded like a good idea!

    We like to fry up a few strips of bacon and some diced onion in a sauté pan and add them to our mashed cauliflower. Never used cream cheese or garlic before, but we’re gonna give it a try!

    We had these for dinner tonight! The taste was great, but the consistency was REALLY smooth. Almost too smooth. My boys didn’t like them for that reason. Any suggestions on how to thicken them up? I am thrilled at how good they were! Can’t wait to make them again!

      Did you food process them? Maybe just use a potato masher and leave more chunks in them?

    Hello I loved this dish the only thing I would tweak is a larger cauliflower and a little less garlic salt but the flavor is amazing :]
