Today, I am sharing this amazing Caprese Chicken. We recently had this, served with steamed artichokes. It was a hit!
I LOVE a good caprese salad. It is so refreshing and delicious! Matched with chicken breasts, this makes a great, filling meal!
Here is how to make this easy Chicken Recipe:
Ingredients
- 6 boneless, skinless chicken breasts
- olive oil
- 1 container grape or cherry tomatoes
- fresh mozzarella cheese
- 1 bunch fresh basil
- 4 garlic cloves, chopped
- salt and pepper, to taste
- balsamic vinegar
Instruction:
Preheat oven broiler.
In a large saute pan (may have to do this in batches, depending on how big your pan is), heat a tablespoon or so of oil. Season chicken with salt and pepper (I used Trader Joe’s Garlic Salt instead of plain salt and it was really good!). Cook chicken over medium-high heat until cooked through, turning at least once to lightly brown both sides.
While chicken is cooking, heat 1 tablespoon of oil in another pan. Cook garlic for 2-3 minutes. Add tomatoes and cook for 2-3 minutes. Add basil, stir, and remove from heat.
Place cooked chicken in a greased baking dish, top with sliced fresh mozzarella and tomato mixture. Place under broiler just until cheese is bubbly and starts to brown.
Sprinkle with balsamic vinegar to taste.
Serve 4-6
