Easy Recipe: Egg and Cheese Breakfast Burrito

Breakfast is my favorite meal of the day.  I love eggs, bacon, toast and all of those yummy foods.  With my boys having to be out the door by 7:30 every morning, we rarely have time to make a big breakfast. 

I know, I should get up earlier and have it ready for them, but I like my sleep a lot. 

We decided to make a quick egg and cheese breakfast burrito one morning and found that they freeze really well.  After the kids left for school, I made a bunch to have on hand for a quick breakfast on busy mornings.  This is an easy recipe that you can make in a matter of minutes and have breakfast for the week ready!

How to make Egg and Cheese Breakfast Burrito's

Ingredients

  • Tortilla Shells
  • Egg's (scrambled)
  • Cheese

Other Ingredients to Add (we did not)

  • Bacon (See how to Bake Perfect Bacon)
  • Sausage
  • Onions
  • Peppers
  • Tomatoes

 

Instructions

Step 1 - Scramble your eggs with any vegies you want to add

Step 2 - Heat the Tortilla shell for about 30 seconds

Step 3 - add your scrambled eggs and cheese onto the tortilla and let it melt the cheese slightly

Step 4 - Fold your burrito up and enjoy!

I wrapped the burritos in plastic and then placed them in a Ziploc bag before putting them in the freezer for future use. 

When we were ready to have them for breakfast, we placed them on a plate with a paper towel under the burrito and microwaved for about 2 minutes or until they were heated completely through.  These Egg and Cheese Breakfast Burrito are a delicious option for kids on the go and will stick with them longer than a bowel of cereal.  I love having them on hand!
