French Vanilla Lemon Blueberry Pound Cake
I came across a recipe for a lemon blueberry pound cake with ricotta cheese a couple weeks ago. It said that the ricotta make the cake moist. So, I created a new cake using some of my favorite flavors!
Ingredients:
1 box Lemon Cake Mix
1 box French Vanilla Instant Pudding
4 Eggs
½ cup oil
½ cup milk
1 carton (15oz) Ricotta Cheese
4 T Lemon Juice
1 Pint Blueberries
Directions:
Combine cake mix and dry pudding in a large bowl.Add eggs, oil, milk, ricotta cheese, and lemon juice.Beat until well combined with no lumps, about 2 minutes. Mixture will be thick.Add the blueberries and stir lightly.Pour into 13x9 greased baking dish and bake for 40-50 minutes.
I topped mine with a glaze.
Glaze Ingredients:1 cup Powdered Sugar½ tsp. Vanilla1-2 tablespoon Lemon Juice
It is no secret that I love lemon, so this really hit the spot! Enjoy!
