There have been so many different Roasted Chickpeas recipes on the web lately and I had to see what all the hype was about and make some myself.

What I’ve found is that Chickpeas are a simple snack to make and they’re a great way to sneak fiber into your diet. Plus, you can make several different flavors to satisfy your cravings. This recipe is a Garlic Parmesan Roasted Chickpeas that’s a salty delicious flavor.

I’m really glad I tried these little snacks, they kind of remind me of a cross between a nut and the old maid in popcorn, do you know what I’m talking about?  The piece that didn’t pop fully and has a partial seed on it that’s crunch and yummy.  I’m can’t wait to make different flavor variation of roasted chickpeas.

Ingredients for Garlic Parmesan Roasted Chickpeas

  • 1 Can of Chickpeas (Garbanzo Beans)
  • 2 Tablespoons Olive Oil
  • 1/4 Cup Grated Parmesan Cheese
  • 1 Teaspoon Garlic Salt
  • 1 Teaspoon Kosher Salt

Instructions

Step 1 – Preheat oven to 375 Degrees

Step 2 – Drain and rinse your beans in a colander.  Let them dry on paper towels until most of the excess moisture is absorbed.

Step 3 – Spread the chickpeas out on a cookie greased cookie sheet

Step 4 – Roast the chickpeas in the oven for 45 minutes or until the beans are crunchy throughout

Step 5 – Remove from the oven and immediately toss with olive oil, garlic salt, Kosher salt and parmesan cheese.  Enjoy right away or keep in an airtight container for a couple days.
