Have you started to enjoy some delicious BBQ this spring? The weather has turned warm very quickly here in MN so we have the grill out and are using it as much as possible. Did I tell you how crappy our winter was? We have about six weeks of beautiful weather before it snows again so lets get going with the BBQ recipes!
I made some amazing Cilantro Lemon Chicken Skewers tonight for the family. I had picked up some Lemon infused Olive Oil at an adorable little shop at Mall of America last week and was dying to use it. I was so excited with how well these came out, even the boys loved them!

How to Make Cilantro Lemon Chicken Skewers
Ingredients You Need
- 4 Skinless, Boneless Chicken Breasts, Cubed
- 2 Tablespoons Lemon Infused Olive Oil (you can use regular olive oil with a teaspoon of Lemon Juice)
- 2 Teaspoons Sriracha Sauce
- 4 Tablespoons Soy Sauce
- 2 Garlic Cloves, Minced
- 3 Tablespoons Fresh Cilantro, Chopped
- 2 Small Limes
- 1 Red Pepper
- 1 Red Onion
Instructions
Step 1 – Mix together the Olive Oil, Soy Sauce, Sriracha Sauce, garlic, cilantro and juice of the limes in a bowl
Step 2 – Add the cubed chicken breasts to the mixture and let marinate in the refrigerator for 2 hours
Step 3 – Cut the pepper and onion
Step 4 – Using skewers place the chicken, peppers and onion alternately on them.
Step 5 – Grill until the chicken is fully cooked.

The chicken had amazing flavor, I could really taste the lemon and cilantro in the skewers. It was the perfect light flavors for me. This recipe is pretty healthy too, so you don’t have to feel too bad about having that second serving!

What a fun way to eat chicken! I love the flavors of the marinade and will definitely have to try this. I need to learn how to grill inside!
