Healthy Recipe: Baked Chicken with Cucumber Salsa
Has Heart Disease affected your family? It feels like more and more people are being diagnosed with this yucky disease. I have been along for the ride while my Dad has battled heart disease for 11 years. It started for him at a very early age in his 40's and since that time he has 27 Stents in his heart. Seriously!
I love my Dad, but I truly believe that if he changed his eating habits that he would help his heart disease significantly. He's set in his ways and stubborn. So, he doesn't change. He likes salt, butter, creams, and all those foods that really aren't that great for us.
It's hard to think about eating food without flavor, because lets be honest, we all think that's how healthy food tastes. I'm hear to tell you that you are wrong, and I have been pleasantly surprised by a few of the recipes that I've made over the last couple weeks that are a Delicious Healthy Recipe option! Recipes like this Baked Chicken with Cucumber Salsa, I inhaled this, it was all my favorite ingredients and I didn't feel like I was missing out on anything!

How to Make Baked Chicken with Cucumber Salsa
Ingredients
- 4 Chicken Breasts
- 2 Tablespoons Mazola Cooking Oil
- Seasoning Salt
Salsa Ingredients
- 2 Cucumbers, chopped
- 2 Medium Tomatoes, chopped
- 1 Yellow Pepper, chopped
- ½ Red Onion, chopped
- 2 Teaspoons Fresh Cilantro, minced
- ½ Teaspoon Salt
- 1 Teaspoon Garlic Salt
- 1 Tablespoon Lime Juice
Instructions
Step 1 - Pour the Mazola Cooking Oil in a pan and heat
Step 2 - Add the chicken breasts to the oil and brown on both sides, place in the oven and bake for 20 minutes at 350 degrees (I use a metal pan so I can just stick the pan in the oven)

Step 3 - Mix all the vegetables together in a medium dish and place in the refrigerator for an hour (do this ahead of time so you can place on the chicken when it's finished or I have been impatient and pulled it out after 20 minutes and used it)
Step 4 - After the chicken is fully cooked, take out of the oven and place on a plate topping with the Cucumber Salsa. Enjoy!

I know that because of my family history, I need to pay attention to what I'm eating now so that I can prevent problems down the road. If I can eat recipes like this, I'm golden and have no complaints about how healthy food tastes!
