Herb and Goat Cheese Stuffed Peppers are the perfect, easy appetizer to whip up for watching your favorite football team at home, Sunday afternoon brunch, or holiday entertaining. Impress family and friends with your gourmet cooking and the beautiful presentation. They are simple but turn out so pretty they look as if you put a lot more effort into them than you actually did- win win.
Ingredients:
18 mini sweet peppers
8 oz. goat cheese
2 cloves garlic, crushed
2 tsp. of each dried herb- rosemary, basil, thyme
1/4 tsp. red pepper flakes
1/2 tsp. sea salt
1/2 tsp. black pepper
Directions:
Preheat oven to 400º
Spray baking sheet lightly with non stick cooking spray.
Wash and slice peppers in half lengthwise, I like to leave the stem attached as it just adds a pretty touch to the finished peppers. Remove the seeds and ribs inside of pepper.
In a small bowl mix goat cheese and all other ingredients until well combined.
Scoop a heaping spoon of goat cheese mixture into each pepper.
Bake peppers for 11-13 minutes, until edges begin to brown and cheese mixture softens.
Serve immediately for best flavor and texture.
You can make the peppers up the night before and bake just before serving.
