Over the last couple months, my husband and I have been working on eating healthier. We did 30 days of clean eating diet that made such a huge difference in our lives. We both lost quite a bit of weight (15 pounds for me and 20 pounds for my hubby) but that was really just a nice side effect of eating clean. The true benefits were really now much better we felt.
We cut out dairy and gluten and really a lot of ingredients that make us feel bloated and yucky. We looked for clean recipe options like this chia seed pudding and worked hard at replacing our old ways with new snacks and meals.
I’ll be honest, it wasn’t always easy! I thought I would have to give up because I just couldn’t make it without milk or yogurt, but then I’d come across a new recipe like this and my entire mood would change. I felt like I was eating “normal” again so of course I wanted to share these recipes with my readers in hope that I could help someone out there that’s trying the Whole 30 or clean eating!

The thing I love most about chia pudding is there are endless varieties so you never get bored. This version is really quick and easy and makes a delicious, healthy dessert, or a quick breakfast or snack anytime. Simply blend it and stick it in the fridge to set. The pudding itself is super creamy and thick, thanks to the magic powers of chia seeds but the best thing about it is it’s the perfect vessel for all your favorite toppings!
How to Make Chia Seed Pudding
Ingredients You Need
- 2 cups almond milk
- 3/4 cup chia seeds
- 2-3 tbsp honey
- 2 cups blueberries
- 2 tsp sugar
Instructions
In a large bowl, whisk milk, chia seeds, and honey together. Cover the bowl with plastic wrap and let set in fridge overnight.
In a medium-sized saucepan, heat blueberries and sugar over medium heat until they burst and become soft. Remove from heat and turn into a thick puree (with the help of a potato masher). Allow to cool.
Once the chia seed has set, start preparing your cups. Scoop your blueberry puree into your serving glass first, it will act as the base. Then fill the rest of your cup with chia seed pudding. Garnish with blueberries and enjoy!

Recipe Notes
I like to blend my chia seeds, milk and honey together before placing it in the refrigerator overnight. It’s not necessary for the recipe but I do like the texture a bit more! It really makes the pudding creamy and delicious!
You can leave the sugar out of the blueberries if desired, there is a bit of honey added to the chia seeds that give it some sweetness!
If you want this to be more of a dessert you can use a full-fat coconut milk, or if you’re in a pinch and don’t have milk you can use water to make this as well. My go to is always almond milk though!
