Deliciously fresh and light Italian Orzo Pasta Salad. It’s the perfect side salad to any sandwich or meal!
There’s actually a little shop in town that makes a version of this recipe that I love. I could eat it every day, it’s so delicious. Instead of making a trip out all the time to grab a dish of this, I decided to make make my own! It’s almost as good!
If you’ve never had Orzo, you need to try it out. It’s a great alternative to traditional pasta’s that you put in salads. The texture is a bit different and it has great flavor. On to the recipe!

I love making this salad in the summer when we’re getting fresh tomatoes, onion and cucumbers from the garden. There’s just nothing like a fresh salad that’s full of veggies that you grew yourself!
I think I’ve mentioned before just how huge my Mom’s Garden is, I’m so lucky to be able to help myself to her veggies in the summer. Ok, maybe I’m actually a little bit spoiled by it! But to be fair, her garden could feed the entire town – it’s HUGE!
This salad is really similar to our Zest Italian Pasta salad, if you don’t have Orzo Pasta on hand you might want to check out that recipe! Pair this salad with a delicious crusty grilled cheese sandwich and you’re going to have a new favorite meal!
