Homemade Lemon Curd

For my fellow lemon lovers, this amazing Homemade Lemon Curd recipe is for you and you're going to be surprised just how easy it is to make with only a few ingredients you can find anywhere!

After making Homemade Lemon Curd several days ago, I have discovered so many different ways to use it! As a toast spread, mixed it in with my plain Greek yogurt, I added it to my favorite lemon bar recipe and even dolloped it on pancakes for my boys. And since I am such a lemon fanatic, there may have been some good old fashion eating it by the spoonful mixed in too! I love when I can use one recipe for so many different (and delicious) purposes!

Delicious and creamy homemade lemon curd.

 

How to Make Homemade Lemon Curd

Ingredients:

  • 1 c. + 2 T. granulated sugar
  • 1 T. cornstarch
  • ⅛ tsp. salt
  • 1 c. fresh lemon juice 
  • 3 large eggs
  • 2 T. unsalted butter
  • 1 tsp. grated lemon zest

Directions:

  • Combine sugar, cornstarch, and salt in a medium saucepan; stir with a whisk. Stir in lemon juice and eggs. Bring to a boil over medium heat, stirring constantly with a whisk.
  • Reduce heat; simmer 1 minute or until thick, stirring constantly. Remove from heat. Add butter and lemon zest; stir until butter melts. Spoon mixture into a bowl; cool.
  • Cover and chill
