Lemon IceBox Cake

When I think about cookies and my favorites, I always think of Vanilla Wafers.  When I was a kid, these are the cookies that we had around.  I remember trying to “dissect” them and pull the layers apart, I remember dunking them in pudding and using them as a spoon but mostly I remember how delicious they were and how I could easily inhale half a dozen in no time flat.

As a Mom, whenever I’m at the grocery store looking for treats for my kids, I grab Voortman Vanilla Wafers.  My boys love them just as much as I do and I hope when they’re older, they remember these delicious wafer cookies with fond memories of their childhood.

I was thrilled to partner with Voortman on a cookie creation recipe and I wanted to share the contest with all my creative readers for anyone who wants to enter!

The Inspired By Voortman contest started online on Monday May 2 and will run until June 13 and there are two different categories that consumers can enter: recipes and art creation!

I created a delicious Lemon Icebox Cake with the Voortman Vanilla Wafers.  It turned out delicious and my kids had it gone in no time flat!

Look how pretty it is too!  It’s a No-Bake cake that’s delicious and fancy enough to serve to guests too!

How to make Lemon Icebox Cake

Ingredients You Need

  • 1 Package Voortman Vanilla Waffers
  • 8 ounces Cream Cheese, Softened
  • 1/2 Cup Lemon Curd
  • 1 Container Whip Topping

Instructions

Using a hand mixer, mix the cream cheese, lemon curd and 3/4 of the whip topping until it’s smooth

Place a layer of Voortman Vanilla Wafers in an 8×8 cake pan

Spread a layer of the cream cheese mixture over the wafers

Next, add another layer of Vanilla Waters and then cream cheese, do this another time before spreading the remaining whip topping on top

Refrigerate for 2 hours before serving

Enjoy!
