Did you see our Russian Tea Cakes that we shared back in December over the Holidays? It’s one of my friends recipes that I crave every year around Christmas, they’re one of those recipes that you just have to have for the holiday or it doesn’t feel right!
Today I made a twist on that traditional Russian Tea Cakes recipe and made a Lemon version. I combined two of my favorites – my favorite cookie and my favorite flavor into the perfect Lemon Russian Tea Cakes! These are pretty high on my list as a favorite cookie! How to Make Lemon Russian Tea Cakes
Ingredients You Need
- 1 Cup Butter, Softened
- 1/2 Cup Powdered Sugar
- 1 Teaspoon Rodelle Lemon Extract
- 2 1/4 Cup Flour
- 1/4 Teaspoon Salt
- Powdered Sugar for Rolling
Instructions
Step 1 – Beat the Butter, powdered sugar and Rodelle Lemon Extract together in a stand mixer
Step 2 – Add the flour and salt to the butter mixture and mix well
Step 3 – Form 1 inch balls and place on a greased cookie sheet, bake at 375 degrees for 7 minutes. Be sure to pull them out of the oven at 7 minutes even if they look like they’re not finished baking!
Step 4 – Roll the Cookies in powdered sugar, you may want to do this twice! Enjoy!
I found these adorable little candy flowers and added them to the Lemon Russian Tea Cakes and they really give them a springy feel. I think making them for Easter would be a great idea!
