Mango Salsa

Is everyone over the cold weather yet?
I personally can’t wait for the weather to warm up. We don’t get much cold here in the south, so I won’t complain too much, but I typically only love the cold during the holidays. It helps set the mood – feeling comfy and cozy during such a happy time of year is picture perfect to me. Now, I would love nothing more than to get out and enjoy some decent walking weather! This is usually our last month of any kind of frigid cold (sorry to those up north) so I’m happy to say that my warm walking weather wish will be granted before I know it. Here’s to hoping you live in an area that will start defrosting soon!
Even if the weather isn’t yet cooperating, I can still start working on my fresh recipes for 2016- like this delicious Mango Salsa! To me, fresh fruit screams happy, healthy, sunny!!
I remember the first time I saw my sister cut open a mango. I had NO idea how to do it and after she showed me I was pretty obsessed. I also couldn’t believe how easy it was!
For this recipe you will need:
1 mango
2 sweet red peppers- or any other color you like
1 avocado- ripe but not mushy
1 lime
2 T red onion (optional for a little more heat)
2 teaspoons fresh tarragon – minced
1/4 t sea salt or more to taste
Simply cube your avocado and mango into a medium size mixing bowl. If you’re going for that added heat and crunch, mince half of a red onion. You only need about two tablespoons, but save the extra incase you find yourself wanting to add more. After you cut the tops off of your peppers and clear out all of the seeds, dice them and add them into your mix. Â Squeeze half of your lime over your salsa, add sea salt and minced tarragon and mix.
You can eat this right away if you’d like, or make it ahead and store it in the fridge until serving time. The longer it sits in the fridge, the better the flavors will marry (this may mean that if you added the red onion, the longer it sits in the fridge the more heat it will have).
We poured our mango salsa over some delicious Shrimp Tacos wrapped in Plantain Wraps. I would tell you how amazing is was, but my opinion may be a tad biased. 😉 You will have to see for yourself! Don’t forget to share your opinion below- I’d love to hear it!
