Thanksgiving is going to be here before we know it! With Halloween less than a week away, we’re already in planning mode for the big eating day. I mean, come on, it’s the biggest eating day of the YEAR! I take advantage of that and make all of my favorite foods. This is not the day to hold back or try to count your calories!

When you think of Thanksgiving and dessert, I’m betting there are a few that come to your mind. Is your family a pumpkin pie loving family or do you go more to the apple and cherry pie? In my opinion, there’s not a wrong answer for this question, they’re all amazing!

We decided to try something different last year and make a variety of mini desserts, including these mini pumpkin pie bites. They’re perfect for little hands to grab on the go or for adults that want to try multiple different dessert flavors. Even after a big meal, you’ll have room left to try a bite or two of each dessert! It’s the perfect solution for those of us who want to eat ALL of the things!

How to Make Pumpkin Pie Bites

Ingredients You Need

  • 2 pre-made pie crusts
  • 1 (8oz) package cream cheese, room temperature
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp pumpkin pie spice
  • Whipped cream

Instructions

  1. Preheat oven to 350 degrees.
  2. Use a non-cooking spray to grease a mini-muffin pan. Set aside.
  3. Using a round cookie or biscuit cutter (approximately 3 inches diameter) cut about 24 rounds out
  4. Carefully press each round into the mini-muffin pan
  5. Using an electric mixer, beat the cream cheese and sugar until smooth.
  6. Add eggs one at a time, beating each until well combined.
  7. Add pumpkin puree and beat to combine.
  8. Stir in vanilla and pumpkin pie spice.
  9. Spoon mixture into each mini pie crust almost up to the top.
  10. Bake for 15-20 minutes or until golden around the edges.
  11. Remove from oven and let cool on a cooling rack.
  12. Top with whipped cream before serving!
